Gluten Free Cauliflower Pizza
There's nothing quite like a pizza but the ones from the well known pizza delivery companies are normally greasy, doughy and don't leave you feeling great. What if you could have your pizza and eat it? Well you can, hoorah! This pizza has a super healthy cauliflower crust so great for those of you that are gluten free too. Add your favourite toppings for the perfect pizza.

For the crust
  1. 1 medium size cauliflower
  2. 1 cup almond flour
  3. 1 tsp. salt
  4. 1 tsp. ground black pepper
  5. 2 tsp. dried oregano
  6. 1 tsp. dried mixed herbs
  7. 2 eggs
For the topping
  1. 2 tbsp. tomato puree
  2. 1 tsp. dried mixed herbs
  3. Olive or coconut oil for greasing
  4. 1 ball of mozzarella
  5. 100gm cheddar cheese - grated
  6. You can add what ever topping you like. I added sliced mushrooms, onion, sweet peppers, sweetcorn, courgette, olives and fresh basil.
For the crust
  1. Place the cauliflower florets into a food processor and process until the cauliflower has a rice like consistency.
  2. In a non stick frying pan cook the cauliflower for about 5 minutes to release the moisture. Stir regularly to avoid browning. Once its soft set aside to cool down.
  3. Preheat the oven to 180°C.
  4. Place a thin tea towel or muslin over a bowl and transfer the cauliflower into it.
  5. Gather up the tea towel and twist the top to squeeze out the moisture. Using your hands squeeze as much moisture out of the cauliflower as possible.
  6. Empty the cauliflower to a clean bowl.
  7. Add the almond flour, salt, black pepper, oregano and mixed herbs and mix.
  8. Add the eggs and mix thoroughly until you have a loose doughy mixture.
  9. Line a pizza tray with baking parchment and lightly grease the parchment with coconut or olive oil.
  10. Empty the mixture onto the parchment and press out with your hands and create a ridge around the edge for the crust.
  11. Place in the oven for 35 minutes until the pizza base is a light golden colour then remove from the oven and get ready to add your toppings.
For the topping
  1. Turn up the oven to 200°C
  2. Add your toppings starting with the tomato puree and then half the grated cheddar.
  3. Add the mozzarella and remaining cheddar and fresh basil on top of your other toppings.
  4. Put the pizza back in the oven until the cheese starts to turn brown slightly making sure the crust doesn't burn. It shouldn't need more than 10 or 15 minutes.
  5. Slice and serve with a lovely fresh salad.
