Moist, gluten free, cakey goodness that goes perfectly with a cup of tea.

  1. 100g coconut flour
  2. 50g almond flour
  3. 60g coconut sugar
  4. 3 eggs
  5. 1 tsp. vanilla extract
  6. 1 tsp. baking powder
  7. 4 tbsp. coconut oil
  8. 50g good quality dark chocolate
  1. Preheat the oven to 160°C
  2. Grease a 7" loose bottom cake tin with coconut oil.
  3. Mix all the dry ingredients together.
  4. Beat the eggs and melt the coconut oil and add to the dry mixture.
  5. Add the vanilla extract and mix thoroughly.
  6. Roughly chop the chocolate and fold into the cake mixture.
  7. Empty into the greased cake tin and bake for approximately 40 minutes.
