Summer Superfood Salad
A deliciously fresh and super healthy salad that you won't be able to stop eating. Berries and spinach are a good source of antioxidants and anti-inflammatory flavonoids but I would say when it comes to berries in particular opt for organic. They have been shown to have more nutrients but also berries are heavily treated with pesticides and fungicides so non-organic berries will have a high amount of pesticide residue on them that can't be washed off. Rocket and watercress are relatives of broccoli and cabbage. The sulphurous chemicals in rocket and watercress are great for supporting the liver, detoxification and for stimulating circulation. This salad has a great balance, it's got protein from the quinoa, healthy fats, good carbohydrates and fibre.

For the salad
  1. 100g bag of rocket, watercress and spinach.
  2. 100g organic blueberries
  3. 100g organic strawberries
  4. ½ cup of quinoa
  5. 50g feta cheese
  6. 2 tbsp. pumpkin seeds
For the dressing
  1. 2 tbsp. good quality extra virgin olive oil
  2. 1 tbsp. balsamic vinegar
  3. 1 tsp. honey
  4. Salt & pepper to taste
For the salad
  1. Cook the quinoa as per instructions on the packet.
  2. Place the washed rocket, watercress and spinach in a bowl or on a large platter.
  3. Sprinkle on the pumpkin seeds and quinoa once it's cooled down.
  4. Slice the strawberries and add to the salad along with the blueberries.
  5. Crumble on the feta cheese.
For the dressing
  1. Place the olive oil, balsamic vinegar, honey, salt and pepper in a cup and whisk together with a fork until everything is well incorporated.
  2. Put aside and dress the salad when you are ready to eat to avoid the leaves going soggy.
