
Paleo Friendly Nutola

This grain free 'granola' is so addictive. Sprinkle it on top of your chia pudding, add it to some natural yogurt and berries for a lovely healthy dessert or as I do sometime, just nibble on it as a snack.
Ingredients
- 40g pecans
- 40g cashews
- 40g macadamia nuts
- 30g hazelnuts
- 30g pistachios
- 40g almonds
- 40g coconut chips
- 15g sunflower seeds
- 15g pumpkin seeds
- 10g chia seeds
- 2 tbsp. coconut oil
- 2 tbsp. honey
- 25g dried cherries
- 25g dried blueberries
- 25g dried cranberries
Instructions
- Preheat the oven to 160°C
- Line a large baking tray with baking parchment.
- Melt the coconut oil and honey and add to a large bowl.
- Add all the other ingredients and mix well until all the nuts and seeds are coated with the coconut oil and honey.
- Empty the mixture out onto the baking parchment and spread evenly.
- Bake for 30 minutes, giving it a mix every 10 minutes to make sure the edges don't burn.
- When golden brown, remove from the oven and allow to completely cool down before transferring to an airtight container.
